Random Fps drop and stuttering

Every time I record the video for some reason goes too fast. Most of the time It run smoothly then a huge fps drop and the video start stuttering. Here is an example https://www.youtube.com/watch?v=90hLzsMrCLY

Do you record into AVI or MP4 format?

Sorry for the late response, I was using avi and also if I use mp4 instead of Avi will I get a lot smaller video size. Because it was 30 gb for avi 30 minute video. And also is there a big difference in quality between AVI and Mp4
